Buckwheat Banana Bread with Maca and Cacao Nibs {Gluten Free}

Confession.... I got to the bread before I actually took the photos (hence why only a half a loaf is pictured) Oops, it just smelled so delicious I could not resist! I've decided to do a little experiment on myself and go completely gluten free for a month to see the effects gluten has on my body.  I'm not allergic to gluten but i've read that removing gluten from the diet can provide mental clarity, improved focus, and improved memory. It has been a challenge so far ( I love my occasional sunday pasta... of course whole wheat) but I'm pushing through it and I will share my experience with you when I finish the challenge. 

It's not every morning that I get to start my day with a nice slice of banana bread, maybe being gluten free isn't so bad after all? 

This bread is packed full of superfood ingredients, cinnamon spice and perfectly ripe bananas.  Throw it together over the weekend, slice up, wrap individually, and freeze for breakfast for the entire week.

Let me introduce you to my superfood bread that is mineral rich, filled with protein, and high in fiber and iron.

Buckwheat is usually thought of as a grain, but is actually the seed of a broadleaf plant related to rhubarb. While it is not a true grain, it is used like one in cooking, and it surpasses rice, wheat and corn on almost every measure of healthfulness. Rice, wheat, and corn are all high on the glycemic scale, thus provoking a quick spike in blood sugar levels, a proven promoter of systemic inflammation. Buckwheat, on the other hand, ranks low on the glycemic scale, making it a better choice. 

Let's talk about Maca, an adaptogenic root vegetable, native to the Peruvian mountainous regions. It has been used nutritionally and medicinally for centuries by the South American indigenes. Maca is rich is calcium, phosphorus, magnesium, potassium, vitamin B1, B2, E, and iron. It contains about 20 trace minerals, 20 fatty acids, and 17 amino acids. Maca is a true superfood, benefiting those with hormonal imbalance, anxiety, depression, and infertility. It is said to increase libido, promote stamina, physical strength, endurance, and mental clarity.

Buckwheat Banana Bread with Maca and Cacao Nibs {Gluten Free}

Superfood bread! Buckwheat is a great, mineral rich, gluten and grain free option with a good amount of protein & magnesium.


  • 4 Very Ripe Bananas- Smashed
  • 1 1/2 Cups Buckwheat Flour
  • 3 Tbsp Melted Coconut Oil
  • 1/2 Cup Almond Milk
  • 2 Eggs
  • 1/2 tsp Baking Powder
  • 1/2 tsp Apple Cider Vinegar
  • 2 Tbsp Maca Powder
  • 1 tsp Vanilla Extract
  • 1/4 cup Cacao Nibs
  • 2 tsp Cinnamon
  • 1/2 tsp Sea Salt
  • 1/2 Cup Coconut Sugar


Preheat oven to 350F. Lightly oil a loaf pan with coconut oil.

In a large bowl stir all dry ingredients - except cacao nibs- together until well combined.

In a medium bowl whisk the eggs together and whisk in all of the wet ingredients including the mashed banana. Whisk until thoroughly combined.

Pour the wet mixture into the dry and stir with a large wooden spoon until just combined. Avoid over stirring.

Fold in the cacao nibs and let the batter sit for 5 minutes.

Pour into the bread pan and evenly spread

Place on the center rack and bake for 45 minutes. Toothpick test for doneness. You want a toothpick that is moist but not gooey or bone dry.

Let cool for 10 minutes in the pan then slide a butter knife around the edges to release the bread, turn upside down, and gently shake out.

Let cool for 10-15 minutes before slicing.

Cook time: 45 minutes 

Total time: 50 minutes
