Raw Snap Pea Parsely and Dill Chilled Soup

 

After a long weekend of not eating the best I wanted to cook a clean, healthy, and light dinner last night. I came across this recipe ,which looked too incredible not to try.  I love a good cold soup in the summer and what makes this soup great is the unique flavor twist of the fresh herbs and creaminess of the avocado. I threw in a tiny bit of fresh ginger for extra spice. Another great thing is that you can throw this soup together in just a few minutes. Yay, for spending less time in the kitchen and more time outside! You can also prepare a day ahead and store in a closed container in the fridge.
