Heirloom Tomato Soup with Goat Cheese


I volunteered at the Tribeca farmers market last Saturday and was extremely excited to participate in the cooking demo. Because there was an abundance of fresh summer heirloom tomatoes I decided to make a tomato soup. This soup was particularly delicious because the tomatoes were at their peak and all ingredients were fresh from the market. I received a ton of complements from shoppers on my recipe which was quite flattering. Mostly, people were impressed with how easy it actually was to make. I wanted to share this recipe because the soup is quite simple but packs an enormous amount of flavor.
