I've been seeing these baked eggs in avocado on Pinterest for a while and decided to give them a try. I seriously can't believe I waited this long to discover such an easy and hearty breakfast. The healthy fats from the avocado provide you with lasting energy for the day and the eggs are great source of protein, making this a nutritious way to start your way. Just pop this in the oven before your morning shower for 20 minutes and you will have yourself a vitamin-packed breakfast that is a great alternative to scrambled eggs.

2 organic eggs
1 tablespoon cilantro
1 tablespoon chives
Crushed Red Pepper
Preheat oven to 450 degrees. Slice avocado in half and scoop out the center of the avocado, just enough so the eggs will fit in the center. Place the avocados in a baking dish and crack an egg in each center. ( Its okay if some of the whites spill out) Place in oven for 20 minutes. Season with salt & pepper. Garnish with fresh cilantro and chives.
