This is by far one of my favorite breakfast recipes to make. Its quick and simple , not to mention healthy. I picked up the cherry tomatoes from the farmers market and they were incredible when cooked. The juices from the tomatoes in combination with the arugula was so delicious!

Cherry tomatoes are also contain vitamin C, lyocpene, and a small amount of iron. Five cherry tomatoes will give you 2 percent of the recommended daily intake of iron.
