Scallops are such an easy and underrated weeknight meal. They cook in a mere 5 minutes and are great for a fast, yet impressive dinner. I picked up these local sea scallops at Whole Foods and purchased about $ 15 dollars worth for two people. While they are a bit more expensive then other fish, the vegetables for the salad were cheap so it ended up balaning out the price of the meal. I spent a total of $30, which is not bad for a delicious dinner for two.
Now, lets talk sugar snap peas - crunchy, crisp, and fresh they are one of my favorite summer vegetables to incorporate. This salad is everything you would want in a summer side dish. It is bright, refreshing, and light. Plus all ingredients are in season and can be purchased at your local farmers market!
