Happy Monday! Hope you beauties had a great weekend. This past weekend I made this super easy, light, and refreshing, summer salad twice! On Saturday, I made a big batch to take as lunch for a lazy beach day and on Sunday I served this up at a BBQ as a side dish. I love that this recipe can be served either hot or cold and is versatile enough to enjoy as a light lunch or a side dish. Another great part of this salad is that the only cooking involved is the quinoa itself, which can be prepared a day ahead of time.
I am very fond of combining sweet and savory, which is why the combination of ripe watermelon and green peas work perfectly together.

2 cups cooked quinoa
1 ½ cups watermelon, cut into 1/2 inch cubes
zest and juice of 1 lime
1/3 cup of olive oil
1 cup of fresh peas, cooked
handful of mint, chopped
¼ cup finely diced red onion
1 tablespoon honey
6 ounces feta cheese (optional)
salt and pepper to taste
Combine cooked quinoa, watermelon, peas, onion, lime zest, and mint in a large bowl. Drizzle with olive oil, lime juice, and honey. Stir to combine, season with salt and pepper and top with feta cheese if wanted.
Serves 6 (as an side dish)
