Happy Hour! Painkiller Smoothies

It's Friday and I'm pumped!! It's mothers day weekend and I'm super excited to spend Sunday with my beautiful mom and brother. I told them I would take them both to their first Soul Cycle Class and I'm looking forward to torturing them (haha - just kidding). But seriously they are in for a treat! ;)

To kick off the weekend I want to share with you our version of the Painkiller cocktail inspired by my recent trip to St. John. If you've been to St. John or the USVI you probably had this signature drink, made with Coco Lopez, pineapple juice, orange juice, and rum. In our painkiller smoothie, we swap out the sugary ingredients for healthier alternatives. Instead we use  homemade coconut milk, freshly squeezed orange juice, and organic frozen pineapples. It's seriously to die for! And of course if you want to skip the rum, you can always make this a breakfast smoothie or a healthy snack.

Painkiller Smoothie:

  • 1 cup frozen pineapple
  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup 100% Hawaiian pineapple juice
  • 3/4 cup home-made coconut milk (see recipe below)
  • 2 -3 oz white or coconut rum (optional)
  • freshly grated nutmeg 


Combine all ingredients in a blender and top with freshly ground nutmeg

Homemade Coconut Milk:

  • 1 cup unsweetened shredded coconut
  • 2 cups very hot (almost boiling) water

Put coconut in blender or Vitamix. Pour boiling water over coconut. Let sit for 1 hour. Blend until creamy. Strain through cheese cloth to remove coconut bits. Refrigerate. Best when cold. Enjoy! 

*note: coconut milk will separate. Just shake before drinking.
