Happy Cinco De Mayo! Now let's make tacos!

Cinco De Mayo is the official start of taco season, or at least that's what I'm declaring it as. Nothing beats a good taco and after all, they are one of my favorite foods on the planet. Always a crowd pleaser, I serve them up in various forms from shrimp tacos to veggie tacos, you name it.  But i've got a new taco crush, and you've gotta try it.  These crispy avocado tacos with a cashew chipotle crema are a little taste of taco heaven. They are creamy, crunchy, and so so tasty!  

Vegetarian tacos are a great alternative to meat-laden variations, and all the fresh ingredients in this recipe really bring a pop of flavor. Serve these up with black beans and spanish rice. 

I love that they are completely vegan and take about 30 minutes to put together. If making for a party, prepare the crispy avocado and crema in advance and compile the taco when your guest arrive. 



  • 2 Ripe Avocados
  • 1/2 cup whole wheat flour
  • 1 cup panko bread crumbs
  • 1 cup almond milk (or any vegan milk)
  • Corn Tortillas
  • 1 bunch radishes
  • 1 ripe mango
  • 1 lime
  • 1 bunch cilantro
  • 1 /2 of a serrano pepper or Jalapeño  
  • Sea Salt & Pepper


  • 1/2 cup cashews (soaked for 4 hours if you don't have high speed blender, such as Vitamix)
  • 1/2 cup filtered water
  • 1/2 serrano pepper, seeds removed
  • 1 teaspoon chipotle
  • 1/4 teaspoon cayenne pepper 
  • 1/2 lime, skin removed 
  • 1 teaspoon sea salt

Makes 6 tacos


Preheat oven to 425 degrees. Slice avocado into large wedges and sprinkle with salt and pepper. Dredge each slice in flour, almond milk, and panko bread crumbs. Place on lined baking sheet and bake for about 20 minutes, turing halfway through. 

Prepare the crema while the avocado is baking. In a blender or food processor combine cashews, water, 1/2 of the chili pepper, lime, and spices. Blend until completely combined. Set aside. 

Thinly slice radishes and small dice the remaining serrano pepper. Slice mango into long strips. To put your taco together add 2 pieces of crispy avocado, a few strips of mango, and as much pepper and radish as you want. Squeeze a quarter of a lime over taco and drizzle your crema over taco. Garnish with fresh cilantro.

SPROUT TIP: Avocados are one of the safest fruits you can buy conventionally-grown, and most experts do not believe you need to purchase organic ones. Their thick skin protects the inner fruit from pesticides, so there's no real need to spend extra money on organic avocados, unless you can afford it.
